Yes, I found at least a dwarf version of each collector pony (Cotton Candy, Blossom, Bluebelle, Butterscotch, Minty, Snuzzle) and of Lemondrop and Peachy. They are definitely a tad harder to find - and a bit of a puzzle to me.
They look like the Italian counterpart to the FF ponies (althought they have concave hooves), but they were NOT the first Italian set. The first Italian set only included 4 collector ponies (Snuzzle among others, and she was white-bodied instead of grey), and these are "normal" bodied.
I never got to see a dwarf mint in package, but I know they were sold/made after the "normal" ones and before the "hunchback" collector ponies.

Nope, I wouldn't say there are more variants of the dwarfes. I find there are more of the regular ones.

(but the dwarves are prettier! :P)
Funny enough, I don't use the airbrushed vs painted eyes as a criterion to discriminate Italian variants. It doesn't tell me enough and I haven't even decided yet it is due to poor quality or whatnot.
In order to be useful, a discriminating criterion should come with as many other typical features as well, while I found eyes to be somehow random, unlike other features. So I usually don't keep eye paint into account.
I typically clssify them according to: mold (there are 4 of them: normal, dwarf, hunchback and "Macau-like"), hoof marks (3 possibilities: on all four, on 2 only with PAT PEND and on 2 hooves without the PAT PEND). symbol (sometimes the design is entirely different, or reverse), and sometimes eye colour (cyan, light blue or teal/turquoise).
